Preparation Instructions

–

1. Store frozen until ready to use.

2. Place donut dough 4X6, if using a 17 X 25" frying screen. To help prevent sticking to the screen, dip bottom side of fritter in flour before placing on the screen.

3. Fill rack and place in 38-40 degree F cooler overnight or for 6-12 hours.

4. Pull rack from cooler and allow donut dough to warm at room temperature for approx. 45 min. to 1 hour.

5. Place screens of product in a proof box, maintain 95-100 degree F and 70-75% humidity. Allow to proof until dough pieces are 2 - 3 times their original size.

6. Preheat fryer to 350-370 degree F. Fry for approx. 80-90 seconds on each side, or until an internal temperature of 195 degrees F has been reached. Glaze while still hot.
