Why Using Real Butter Is Always Better for Our Wholesale Bakery Products

Why Using Real Butter Is Better for Baking

One of the most important aspects of butter is how it’s made – it always contains at least 80% fat, no more than 16% water, and just a small number of milk proteins. Plus, because water converts to steam when baked, using butter always results in crisper, flakier textures.

Additionally, as opposed to shortening or margarine, butter: 

  • Is all-natural

  • Has an ultra-rich flavor

  • Creates crispy and flaky textures

For cakes, cookies and pastries, butter provides a richer flavor because it’s cream based, whereas margarine is made from vegetable oil. Butter is high in fat, and it is also incredibly versatile and can be used in a variety of different ways – from creating a basic dough to fluffy, extravagant pastries and everything in between. 

Why Baker Boy Only Uses Real Butter

Unlike butter, shortening is 100% fat, as it is derived from vegetable oils and does not contain any water. Without water, no steam is created during the baking process, which results in textures that are softer and tenderer. That’s why Baker Boy is committed to only using real North Dakota butter in our bakery products.

The butter we use in our products is purchased directly from Pride Dairy in Bottineau, North Dakota – the last small-town creamery in the state!  

The History of Butter in North Dakota

Agriculture has been important to the people of North Dakota since the first people arrived in the area thousands of years ago. It remains North Dakota's largest industry today. A settlement boom occurred within North Dakota from 1879 to 1886, bringing in 100,000 settlers, mostly farmers. Then, some farmers began to form co-op creameries as North Dakota developed a small dairy industry around 1910. 

While the dairy industry in North Dakota is much smaller today than many other agriculturally driven states, it’s led by a hearty and thriving group of dairy producers who keep the state flush with butter, cream and milk products.
